Instructors
Rémy Lucas
Professeur associé à FERRANDI Paris, psychosociologue de la cuisine, Rémy LUCAS analyse l’offre alimentaire en France et propose une vision prospective des tendances culinaires. Son approche de la cuisine et de l’alimentation passe par un décodage sémantique des nourritures, en rapport à leurs formes.
Éric Trochon
Professeur à FERRANDI Paris, Chef, Meilleur Ouvrier de France 2011, Eric Trochon a fait de la cuisine un large chantier de réflexion et d’expérimentation. Entrepreneur, il dirige des restaurants à Paris et à Tokyo. Styliste culinaire, il signe une vingtaine d’ouvrages dans le domaine de la cuisine, et est associé à la création du magazine 180°C.
Brian Lemercier
Diplômé de FERRANDI Paris, Brian travaille comme Chef de cuisine en France et aux États-Unis, collabore avec Eric Trochon en tant qu’auteur, puis rejoint les équipes d’Alain Ducasse comme chef-formateur et consultant. Il est aujourd’hui en charge de projets liés à l’innovation pédagogique numérique et à l’entrepreneuriat à FERRANDI Paris.

Ecole Supérieure de Cuisine Française (ESCF - Higher School of French Cuisine at Ferrandi) is a professional training school located in central Paris. Established by The Paris Chamber of Commerce and Industry (CCIP), the school is part of École Grégoire-Ferrandi and specializes in training students for work in hospitality management and French cuisine.
In 2005 the school founded Atelier Pierre Hermé, a workshop class focusing on techniques and creations of french pastry chef Pierre Hermé.
