Syllabus

Module 1 : La biologie de la vigne
- Cycle annuel de la vigne et historique de la culture de la vigne
- Ecophysiologie de la vigne, relations sol-plante-climat
- Développement et maturation du raisin
- Innovation variétale

Module 2 : La viticulture
- Cycle annuel de la viticulture et mise en place d’un vignoble
- Analyses des terroirs et production des plants
- Gestion de la conduite du vignoble, de l’irrigation, la fertilisation et des maladies
- Innovations en viticulture

Module 3 : L’oenologie
- La biochimie et chimie des moûts
- Les itinéraires techniques et les technologies de vinification et de stabilisation
- Les fermentations et interventions microbiennes
- La chimie de vins, des arômes et l'évaluation de la qualité

Module 4 : Economie du vin et filières
- Etat des lieux de la consommation, de la production et des flux
- Consommateurs et comportements de consommation
- La construction et la valorisation de l'offre française
- Structuration de la filière viti-vinicole française et interactions entre acteurs
